White Winter Truffle
The Tuber magnatum pico, also known as the white winter truffle, is so important that the Piedmontese truffle capital of Alba has dedicated its own trade fair to it, the "Fiera Internationale del Tartufo Bianco d'Alba". This queen of truffles mainly thrives between September and January in her native Piedmont, the growing region we trust for our products. This rare noble mushroom only occurs in the wild and has not yet been successfully cultivated. The Tuber magnatum pico can also be found in the northern and central Apennines, in the French Périgord, in Romania, Croatia and Bulgaria. In general, the further south or east you find white truffles, the lower the quality.
The white truffle is characterized by its silky matt surface and its round or irregular shape. The color palette ranges from white to light brown to intense pink. The color of the flesh varies depending on the tree under which it was grown. The firm consistency and characteristic marbling are trademarks of the Alba truffle, as is its intense aroma of garlic or wild garlic, shallots and soft cheese. In Italian cuisine, its strong aroma gives pasta and rice dishes an extravagant touch. The taste is milder than the intense aroma would suggest.
